Modified as per cooked for mum fry 1 whole red chilli without seeds (~2inches long) + 0.5 finely chopped onion add 100ml of coconut milk add 150g of white rice, stir (about 1 tea-cup full (cup, not a mug)) add 400ml of vegetable stock, stir and leave to simmer until rice is mostly cooked (but not quite) add 1 tin of tuna (~140g) add 0.5 to 1 red pepper leave until rice is cooked add mixed pulses 200g (~ 1/2 standard can) add salt+pepper to taste serves 2 medium portions
